Concentrated yet never heavy, barrel-aged. The Saint-Chinian “Must Have”, praised by the wine press.
- Grape varieties
- 70% syrah, 15% grenache, 15% carignan.
- Terroir
- Very stony limestone plateaux, free-draining soils, between 280 and 300 metres above sea level, on an east-west axis. Yields are kept in check for full ripeness without excessive alcohol.
- Yield
- Around 30 hl per hectare.
- Winemaking
- Hand-picked harvest, destemming, fermentation with indigenous yeasts.
- Ageing
- 70% in casks, the syrah in barriques, 30% in demi-muids.
- Tasting
- Ripe fruit and aromatic complexity, finesse, roundness, melted tannins. Good ageing potential; best decanted before serving.
- Food pairings
- Dishes in sauce, game.
- Formats
- 75 cl bottle and 150 cl magnum.
